Best Meatloaf Ever
The first 3 weeks of the new year have been a whirlwind. I have had a fairly time consuming project for work that has had me working daytime and nightime after Evan sleeps. Derek and I are on a health kick and have lost weight. No details to share just yet. We have done more home cooking this past month than in a loooong time. Here is something I whipped up but really like.....
Meatloaf with Good Stuff Inside
2.5 lbs ground beef
1/2 cup italian breadcrumbs
2 eggs (beaten)
1 small can sliced black olives
2 large pieces of cube sized Roasted Red Bell Pepper (find in glass jar in condiments section)
Salt & Pepper
Pepperjack Cheese- cubed (about 12-18 small cubes)
Ketchup
Mix in large bowl only enough to blend: beef, breadcrubs, eggs, olives, red pepper, salt & pepper. Add 1/2 mixture to loaf pan. Add cubes of peperjack cheese (I usually scatter them around and press them in the meat a little bit). Add the remainder of the meat mixture and a couple more cubes of cheese to the top. Spread Ketchup over the top of the meatloaf. Cook on 350 for 50-60 minutes. Check with meat thermometer for doneness. Serve with mashed potatoes and green beans. So yummy and so easy. Evan is a HUGE fan.
