More great recipes - Giada's Pork Loin

I made this recipe last week and it was AMAZING. The only thing I would add is to baste the pancetta with the pan juices occasionally as it's usually cut so thin, it may burn otherwise. You could substitute bacon for the pancetta to save a little money. Because of time (Evan) I wasn't able to put the loin in the fridge for a time to absorb the herbs. Even though I cooked it immediately, the flavors of the herbs and garlic still permeated the meat.
